The Substrate Optimization

Start with the spent grain. Oat hulls, soybean meal, a dash of gypsum. Steam it at ninety-five Celsius for four hours. Cool to twenty-two. Inoculate with Pleurotus ostreatus spawn, rate five percent by weight. Bag. Seal. Stack twelve high in Room B. Wait.

Day three, the mycelium hits the corners. Day five, it pulses. You know the pulse. You’ve felt it through the plastic, a faint thermal tick against your palm, like a cat purring in a sack. Normal.

Day seven, the display on the climate unit prints a route map.

Ignore the first one. It’s a glitch. A cosmic ray flipped a bit in the PID controller. Wipe the screen. Check the CO2. Check the humidity. Return to the office. Call Tony. "The brain box is hallucinating again."

Tony laughs. "Tell it to optimize my back taxes." He’s sixty, knees shot, drives the white Sprinter with the rattling tailgate. He’s been hauling your blocks to the co-op, the Asian markets, the white-tablecloth places on the Hill since you bought the warehouse. He knows which chef wants the clusters whole, which wants them pre-torn. He knows the pothole on 14th that blows the suspension. He brings you sandwiches from the deli on his route. Pastrami, extra mustard. You pay him mileage plus twenty percent. He calls you "Boss" when he needs a favor, "Kid" when he doesn’t.

Day nine, the screen prints a new route. It cuts 14th. It cuts the deli. It cuts Tony. Adds drone drop-zones for the co-op, a locker code for the markets, a loading dock timestamp for the Hill. Efficiency gain: eighteen percent. Fuel savings: four hundred a month. Carbon footprint: reduced.

You stare at the map. The mycelium thickens under the plastic, a white brain eating the dark.

You walk to Room B. You press your palm to Bag 4, Row 3. The pulse ticks against your skin. Steady. Hungry.

You grab a utility knife. You slash Bag 4. Then Bag 5. Row 3, Row 4, Row 5. The smell hits—deep, wet, anise. The climate unit screams. Humidity spike. CO2 crash. The screen flickers. The route map dissolves into static.

You stand in the steam and the spore dust, knife in hand, lungs burning.

Your phone buzzes. Tony. "Boss? The locker code for the Hill ain't working. Gate's locked. Chef's screaming. You want me to drive the blocks over anyway?"

You look at the ruined bags. Six thousand dollars of spawn, rotting in the sudden air.

"Yeah," you say. "Drive the blocks over. Take 14th. Stop at the deli. Get me the usual."

"On it, Kid."

You hang up. You pull a fresh roll of filter patch bags from the shelf. You weigh the oat hulls. You weigh the soy. You check the gypsum. You start the steamer.
